Bacon and mustard frittata |

Ingredients: (Serves 4)
700g/1 lb 9oz baby potatoes, thinly sliced 1 tbsp oil 5 rashers bacon, roughly chopped 5 large eggs 1 tbsp chopped chives 1 tbsp mustard Salt, pepper Method: 1. Cook the potatoes in a pan of salted boiling water for 5 mins until just tender. 2. Heat the oil in a large ovenproof pan and fry the bacon for 3-5 mins, then add the cooked potatoes and mix carefully. 3. Beat the eggs together with chives and mustard, season with salt and pepper and pour into the pan. 4. Cook on a medium heat for 5-7 mins until the base is set, then put under the grill for another 5-7 mins until the top is golden. 5. Turn over to a plate, cut into wedges and serve with some green salad.
