Tomato, bacon & chive quiche Print E-mail

Ingredients: (Serves 4)  
Pastry:
240g/8½ oz plain flour
120g/4½ oz chilled butter, cubed
2 tbsp cold water
Filling:
150g/5½ oz bacon rashers, chopped
250ml/9fl oz crème fraîche
3 eggs
5 cherry tomatoes, quartered
1-2 tbsp chopped chives
150g/5½ oz grated cheddar
Salt, pepper

Method:
1. Put the flour and butter into a large bowl and rub the butter into the flour, adding 2 tbsp of cold water as you go to make smooth dough. Roll out the dough and press it into a flan dish. Place in a fridge for an hour.
2. Fry the chopped bacon in a little oil for a minute or two, stirring all the time. Remove from the heat and set aside.
3. Whisk together crème fraîche and eggs, season with salt and pepper, then stir in the tomatoes, chives, 2/3 of the grated cheese and bacon.
4. Pour the mixture into the chilled base, sprinkle with the remaining cheese and bake at 200°C/fan 180°C for 40 mins. Serve with green salad.
