Ingredients: (Serves 2-3) 1 tbsp oil 1 onion, chopped 400g/14oz minced beef ½ tin sliced mushrooms, drained ½ tin chopped tomatoes ½ pepper, chopped 1 tsp thyme 300ml/½ pt boiling water 1 beef stock cube Salt, pepper
Method: 1. Heat the oil in a large pan, add onion and cook for a minute. 2. Add minced beef and cook, stirring, until browned. 3. Add mushrooms, chopped tomatoes, pepper and thyme. 4. Dissolve the stock cube in the boiling water and pour into the pan. 5. Season with salt and pepper, cover and cook for approx 45 mins, stirring occasionally. Serve with rice or mashed potatoes.
