Potato, mushroom and ham bake |

Ingredients: (Serves 2)  700g/1 lb 9oz potatoes, sliced 1 small onion, sliced 75g/3oz mushrooms, sliced 150g/5½ oz cooked ham or bacon, chopped 100ml/3½ fl oz milk 125g/4½ oz herb and garlic cream cheese Salt, pepper
Method: 1. Parboil the potatoes in a pan of boiling water for 5 mins; drain. 2. Preheat the oven to 210°C/fan 190°C and lightly grease and ovenproof dish. 3. Arrange half of the potatoes on the bottom of the dish, season with salt and pepper, add onion slices, mushrooms, ham and cover with the remaining potatoes. 4. Whisk together milk and cream cheese and pour over the potatoes. Bake for approx 40 mins until golden.
