Ingredients: (Serves 2-3) 1kg/2 lb 3oz potatoes 250ml/9fl oz milk 30g/1oz butter 1 tbsp oil 1 onion, finely chopped Handful of frozen peas 1 egg, beaten 150g/5½ oz chopped ham Bunch of chives, chopped 100g/3½ oz grated cheddar Salt, pepper
Method: 1. Peel the potatoes and boil them until tender; drain and mash with milk and butter. 2. Heat the oil in a small pan, add onion and cook for 3-5 mins, then add to the potatoes. 3. Cook the peas in boiling water for 3 mins (or in a microwave), drain and add to the potatoes. 4. Stir in the beaten egg, ham, chives and half of the grated cheese. Season with salt and pepper. 5. Transfer to a large shallow ovenproof dish greased with oil or butter, spread evenly and sprinkle with the remaining cheese. 6. Bake at 200°C/fan 180°C for approx 30 mins until golden. Serve with some side salad.
