Potato & vegetable bake Print E-mail

Ingredients: (Serves 3)  
700g/1 lb 9oz potatoes
150g/5½ oz  German cooked pork sausage (from Lidl)
350g/12 oz frozen stir-fry vegetables
100ml/3½ fl oz milk
2 eggs, beaten
1 tbsp mustard
1 tsp paprika
1 tsp salt
1 tsp soy sauce
1 tsp Worcestershire sauce
100g/3½ oz grated cheese

Method:
1. Peel the potatoes and cut in small cubes; cook in a pan of boiling salted water for 5 mins; drain.
2. Coarsely grate the sausage and stir into the potatoes together with the frozen vegetables. Transfer into an ovenproof dish.
3. Put the milk in a small bowl, add eggs, mustard, paprika, salt, soy and Worcestershire sauce; whisk until combined and pour over the potato mixture.
4. Bake at 200°C for 10 mins, then sprinkle with the grated cheese and bake for further 20 mins until golden.
