Pork & carrot casserole Print E-mail

Ingredients: (Serves 2)  
400g/14oz pork chops, cut into cubes
2 tbsp oil
1 onion, chopped
2-3 large carrots, chopped
1 tsp crushed caraway seeds
2 tbsp plain flour
½ chicken stock cube
300ml/ ½pt  water
Salt, pepper

Method:
1. Heat the oil in a large pan, add onion and cook for a minute, stirring.
2. Add pork and fry for a few mins, stirring, until the meat is sealed.
3. Add caraway seeds, stir, then add flour and stir well.
4. Add carrots, stock cube, season with salt and pepper and pour in the water.
5. Transfer to a pressure cooker and cook for 25 mins (if you don’t have a pressure cooker, just cover the meat with water, cover and cook until the meat and carrots are tender, stirring occasionally and adding more water if necessary).
6. Serve with potatoes.
