Ingredients: (Serves 2-3) 400g/14oz mince beef 1 tbsp oil 1 onion, chopped 1 tbsp plain flour 2-3 large carrots, cut into large chunks 6 medium potatoes, peeled and cut into large chunks Large tin of baked beans 1 beef stock cube ½ tsp dried thyme Salt, pepper Worcestershire sauce
Method: 1. Heat the oil in a large pan, add onion and fry for 1-2 mins, then add mince beef and cook, stirring, until browned. 2. Sprinkle with flour, stir well, then add carrots and potatoes. 3. Pour in enough water to cover, crumble in the stock cube with thyme, season with salt and pepper. 4. Cover the pan and cook until the vegetables are tender, stirring occasionally. (If you have a pressure cooker this will only take 10-15 mins to cook). 5. When the vegetables are tender add the baked beans and heat through. Season with Worcestershire sauce and serve.
