Courgette and bacon gratin |

Ingredients: (Serves 2) 2 small courgettes 200g/7oz bacon rashers 1-2 tomatoes, finely chopped 200g/7oz grated cheddar 250ml/9 fl oz fresh cream 1-2 cloves garlic Salt
Method: 1. Preheat the oven to 200°C and grease a large ovenproof dish. 2. Slice the courgettes (about ½ inch slices) and arrange them in the dish. 3. Push the bacon rashers in between the courgettes and sprinkle with the chopped tomatoes. 4. Sprinkle the grated cheese on top and bake for 10 mins. 5. Mix together cream, garlic and a pinch of salt and pour into the dish. Bake for further 20 mins until golden. Serve with potatoes.
