Ingredients: (Serves 2-3) 6 potatoes, cooked and cut into cubes 1 tbsp oil 1 tomato, chopped 1 large can of baked beans 1 can of corned beef, chopped 3 eggs, beaten 1 tbsp chopped chives
Method: 1. Heat the oil in a large frying pan, add the potatoes and cook for 3-5 mins until golden. 2. Add tomato, beans, corned beef and stir. 3. Mix together eggs with chives and pour into the pan. 4. Cook for 3-5 mins until the base is cooked, then finish under hot grill until the top is set.
