Cauliflower and bacon gratin Print E-mail

Ingredients: (Serves 3-4)  
450g/1 lb cauliflower, broken into small florets
200g/7oz bacon, diced
200ml/7 fl oz fresh cream
1 tsp plain flour
200g/7 oz grated cheddar
2 slices of white bread
Salt

Method:
1. Cook the cauliflower florets in a pan of salted water for 5 mins, drain.
2. In the meantime fry the bacon cubes in a little oil.
3. Lightly grease a large ovenproof dish and put in the cooked cauliflower and bacon.
4. Mix the cream with flour, then add half of the cheese and stir into the cauliflower and bacon in the dish.
5. Whizz the bread in a food processor to make breadcrumbs, mix with the rest of the cheese and sprinkle over the cauliflower and bacon.
6. Bake at 180°C for 40 mins and serve with potatoes.
