Japanese rice salad Print E-mail

Ingredients: (Serves 4)

500g/1 lb 2oz rice

2 tbsp oil

2 onions, chopped

200g/7oz ham, cut into strips

2 red peppers, cut into strips

150g/5½ oz tinned mushrooms, sliced

150g/5½ oz tinned sweetcorn

150g/5½ oz tinned peas

Salt, pepper

 

Method:

1. Cook the rice in a pan of salted boiling water until tender.

2. Heat the oil in a pan, add onion and cook for 4-5 mins until soft.

3. Add ham, peppers, mushrooms and cook for another 3-4 mins.

4. Stir in the cooked rice, sweetcorn and peas and season to taste.

5. Serve hot as a side dish or chilled as a salad.
