Stir fried noodles with chicken |

Ingredients: (Serves 4) 250g/9oz egg noodles 6 tbsp oil 450g/1 lb chicken breast fillets, cut into strips Bunch of scallions, sliced 2cm/ ¾inch piece of fresh ginger, peeled and finely chopped 2 cloves garlic, sliced 1 chilli pepper, chopped 3 tbsp soy sauce 2 tbsp lemon juice Method: 1. Cook the noodles in a pan of boiling water until just tender and drain. 2. Heat 3 tbsp oil in a wok or large frying pan, add chicken strips and stir fry for 2-3 mins. 3. Add another 3 tbsp oil, scallions, ginger, garlic and chilli pepper and stir fry for another minute. 4. Add the cooked noodles and stir fry for another minute. 5. Pour in the soy sauce and lemon juice, stir and serve.
