Spaghetti with liver sauce |

Ingredients: (Serves 4) 500g/1 lb 2oz spaghetti 2 tbsp oil 500g/1 lb 2oz chicken liver, chopped 1 onion, chopped 200ml/7 fl oz red wine 5 tbsp ketchup Salt, pepper Blue cheese to serve Method: 1. Cook the spaghetti according to the instructions on packet. 2. Heat the oil in a large pan, add onion and cook for 2 mins. 3. Add the chicken liver, season with salt and pepper and fry until cooked through. 4. Add wine, bring to the boil and cook until the liquid reduces by half. 5. Add ketchup and stir in the spaghetti. 6. Serve topped with grated or crumbled blue cheese.
