Layered pasta and vegetable bake Print E-mail

Ingredients: (Serves 4)

500g/1 lb 2oz pasta

300g/10½ oz broccoli, cut into florets

1 onion, finely chopped

1 pepper, chopped

2 tomatoes, chopped

2 pots crème fraîche

4 tbsp water

4 cloves garlic, crushed

150g/5½ oz mushrooms, sliced

150g/5½ oz blue cheese, grated

150g/5½ oz cheddar, grated

All purpose seasoning

Salt, pepper

 

Method:

1. Cook the pasta according to the instructions on packet.

2. Cook broccoli in a pan of salted boiling water for 3 mins.

3. Preheat the oven to 200°C/fan 180°C and grease an ovenproof dish.

4. Put half of the cooked pasta on the bottom of the dish.

5. Mix together onions, peppers, tomatoes and the cooked broccoli, season with the all purpose seasoning and arrange on top of the pasta.

6. Mix together crème fraîche, 4 tbsp water and garlic, season with salt and pepper and pour half of the sauce on top of the vegetable mix.

7. Cover with sliced mushrooms and blue cheese.

8. Put the remaining pasta on top, pour in the rest of the cream sauce and sprinkle with grated cheddar.

9. Cover with tin foil and bake for approx 35 mins.
