Ingredients: (Serves 4) 300g/10½ oz penne pasta 2 tbsp olive oil 2 red onions, sliced 2 fennel bulbs, chopped 2 garlic cloves, sliced 125g/4½ oz mushrooms, sliced 300g/10½ oz cooked chicken pieces 300g Laughing cow cheese 150g/5½ oz blue cheese, grated 3 tbsp grated parmesan Salt, pepper Method: 1. Cook the pasta according to the instructions on packet. 2. Heat the oil in a large pan, add onions, fennels, garlic and mushrooms and cook for 5-7 mins. 3. Add cooked chicken pieces and Laughing cow cheese and stir until the cheese has melted. 4. Stir in the cooked pasta and transfer to an ovenproof dish. 5. Sprinkle with blue cheese and parmesan and bake at 200°C/fan 180°C for 10-15 mins.
