Spinach and red pepper spaghetti Print E-mail

Ingredients: (Serves 4)  

500g/1 lb 2oz spaghetti

4 tbsp olive oil

1 small onion, finely chopped

½ red pepper, finely chopped

2-3 cloves garlic, crushed

250g/9oz baby spinach, finely shredded

200g/7oz grated cheese

Salt, pepper

 

Method:

1. Cook the spaghetti according to the instructions on the packet.

2. Heat 2 tbsp olive oil in a large pan, add onion, pepper and garlic and gently cook for 3 mins.

3. Add spinach, salt and pepper and cook for another 3 mins.

4. Stir in the cooked spaghetti, grated cheese and the remaining 2 tbsp olive oil, season to taste and serve.
