Ingredients: (Serves 4)
250g/9oz rice
450g/1 lb broccoli, cut into florets
150g/5½ oz ham, chopped
200g/7oz grated cheddar
50g/2oz butter
4 eggs, separated
1 tsp all purpose seasoning
Salt, pepper
Method:
1. Cook the rice in a pan of salted boiling water until tender.
2. Cook or steam the broccoli florets for 4 mins.
3. Preheat the oven to 200°C/fan 180°C and grease an ovenproof dish.
4. Beat the egg yolks with butter, then stir in the cooked rice, broccoli, ham and half of the grated cheese. Season with salt, pepper and all purpose seasoning.
5. Beat the egg whites until soft peaks form and gently fold into the rice mixture.
6. Transfer to the prepared ovenproof dish and bake for 15 mins. Then sprinkle with the remaining cheese and bake for further 15 mins.
