Ingredients: (Serves 4) 2 eggs, beaten 4 cups cooked rice 1 cup frozen peas, thawed 2 tbsp finely grated carrot 1 onion, finely chopped 1½ tbsp butter 2 tbsp soy sauce Salt, pepper Method: 1. Scramble the eggs in a small pan over medium heat. 2. Mix together the cooked rice, peas, grated carrot, scrambled eggs and onion. 3. Melt the butter in a large frying pan over medium/high heat. Add rice mix into the pan, add soy sauce and salt and pepper. Cook for 6-8 minutes, stirring often.
