Ingredients: (Serves 4) 2 tbsp olive oil 1 onion, finely chopped 1 clove garlic, crushed 2 tins chopped tomatoes Bunch of basil, chopped 1 red pepper, finely chopped 400g/14oz Philadelphia cheese 1 egg, beaten 16 cannelloni tubes 125g/4½ oz mozzarella cheese, grated Salt, pepper Method: 1. Heat the oil in a pan, add onion and garlic and cook for 2-3 mins. Add tomatoes, most of the basil, season with salt and pepper and cook for 5 mins. 2. To make the filling for cannelloni mix together red pepper, Philadelphia cheese, egg and the remaining basil. Season with salt and pepper. 3. Preheat the oven to 210°C/fan 190°C and lightly grease an ovenproof dish. 4. Cook the cannelloni tubes in boiling water until just done but not soft, then fill them with the cheese mixture. 5. Arrange the filled cannelloni on the bottom of the baking dish, pour over the tomato sauce, sprinkle with mozzarella and bake for approx 30 mins.
