Ingredients: (Serves 4-6)  2 cups of rice 2 tbsp olive oil 2 small onions, finely chopped 250g/9oz courgettes, chopped 1 red pepper, chopped Handful of frozen peas 8 tbsp tomato puree 8 tbsp water 2 tsp caster sugar 4 tbsp ketchup 150g/5½ oz red cheddar, grated
Method: 1. Boil the rice according to the instructions on the packet. 2. While the rice is cooking, heat the oil in a pan, add onions and gently cook for 5 mins. 3. Add courgettes, pepper, peas, tomato puree, water and sugar and stir well. Cover and cook on a low heat for 10-15 mins. 4. Mix the vegetable mixture with the cooked rice, add ketchup and half of the grated cheese and stir well. Serve sprinkled with the remaining cheese.
