Tomato & anchovies spaghetti |

Ingredients: (Serves 2) 250g/9oz spaghetti 2 tbsp olive oil 6 anchovies from a tin, chopped 2 large cloves of garlic, finely chopped 1 tin chopped tomatoes 8 black olives, chopped 1 tbsp chopped parsley Salt, pepper Parmesan to serve
Method: 1. Cook the spaghetti in a pan of salted boiling water; drain. 2. Heat the oil in a saucepan, add garlic and sauté for one minute. 3. Add anchovies and cook, stirring, for a further minute. 4. Add tomatoes, olives and parsley, season with salt and pepper and cook, uncovered for 5-8mins. 5. Stir in the cooked spaghetti and serve sprinkled with parmesan.
