Pasta alla campagnola Print E-mail

Ingredients: (Serves 2-3)  
300g/10½ oz penne pasta
1 tbsp butter
1 small onion, finely chopped
1 small courgette, finely diced
1 tbsp plain flour
200ml/7 fl oz fresh cream
2 triangles laughing cow cheese
4 slices of ham, chopped
Salt, pepper

Method:
1. Cook the pasta according to the instructions on the packet.
2. Melt the butter in a small pan, add onion and courgette and gently cook for 10 mins until soft but not brown.
3. Add flour and stir well, then slowly pour in the cream, stirring all the time.
4. Mash the cheese with a fork and add to the sauce, bring to the boil and stir until the cheese melts.
5. Add ham, season with salt and pepper and stir into the cooked pasta.
