Bacon & tomato spaghetti Print E-mail

Ingredients: (Serves 2-3)  
250g/9oz spaghetti
1 tbsp olive oil
1 pack of bacon bits (100g)
1 onion, peeled and coarsely grated
1 clove garlic, crushed
1 tin of chopped tomatoes
2 tbsp crème fraîche
Bunch of parsley, chopped
Grated cheese to serve (optional)
Salt

Method:
1. Cook the spaghetti as per instructions on the packet.
2. In the meantime heat the oil in a large pan, add bacon bits and fry for 2 mins, stirring.
3. Lower the heat, add onion and cook for 5 mins, stirring occasionally.
4. Add garlic and tomatoes, season with salt, cover and gently cook for 15 mins.
5. Take off the heat, stir in the crème fraîche and parsley and stir in the cooked spaghetti.
6. Serve sprinkled with grated cheese if you like, with some garlic bread and side salad.
