Quick pasta with artichokes |

Ingredients: (Serves 4) 450g/1lb pasta 2 tbsp olive oil 110g/4oz artichokes from a jar or tin 1 clove garlic, crushed 1 tbsp parsley, finely chopped Juice from ½ lemon Salt, pepper Grated parmesan Method: 1. Cook pasta according to the instructions on pack. 2. Drain the artichokes and mash them down with a fork. 3. Heat the oil in a pan, add garlic and fry for a minute. 4. Add artichokes and parsley and heat through for a couple of minutes. 5. Add lemon juice and stir into the cooked pasta. Season to taste. 6. Serve topped with parmesan cheese.
