Pasta with courgette sauce |

Ingredients: (Serves 2) 250g/9oz pasta 1 tbsp olive oil 250g/9oz courgettes, coarsely grated 1 clove garlic, sliced 150g/5½ oz sour cream 100g/3½ oz grated cheese Salt, pepper Method: 1. Cook pasta according to the instructions on pack. 2. Heat olive oil in a pan, add grated courgettes and fry for 2 mins, stirring continuously. 3. Add garlic, lower the heat and fry for another 3 mins. 4. Add sour cream, mix and season with salt and pepper. 5. Stir in the cooked pasta, divide onto plates, top with grated cheese and serve.
