Crispy chicken with bacon |

Ingredients: (Serves 4) 4 skinless chicken breasts4 tbsp milk4 tbsp plain flour100g/4oz dried breadcrumbs4 tsp olive oilSaltFilling:75g/3oz button mushrooms, chopped100g/4oz bacon steak, diced4 tbsp vegetable stock1 garlic clove, crushed2 tbsp fresh basil, chopped Method:1. To make the filling place the mushrooms, bacon, stock and garlic in a non-stick pan. Cook for 10 mins, stirring, until the liquid has evaporated. Continue cooking until the mushrooms are golden, then stir in basil.2. Preheat the oven to 200°C/fan 180°C and drizzle a non-stick baking tray with oil.3. Make a deep cut in the side of each chicken breast to make a pocket and spoon in the mushroom mixture. Secure with cocktail sticks.4. Pour the milk in a shallow dish and put the flour and breadcrumbs on separate plates.5. Season the filled chicken breasts with salt and dip them into the flour to coat. Shake off any excess.6. Dip each one in the milk and then in the breadcrumbs to coat.7. Place the chicken breasts on the baking tray and bake for 20-25 mins until golden. Remove the cocktail sticks before serving.
