Ingredients: (Serves 4) 1 cooked chicken ½ chicken stock cube 275ml/ ½pt boiling water 1 tsp oil 1 onion, sliced 5 mushrooms, sliced 1 pepper, sliced 1 clove garlic, sliced 2 tbsp medium curry powder 1 tbsp flour Method: 1. Remove the chicken off the bone. 2. Dissolve the stock cube in the boiling water. 3. Heat the oil in a large pan and gently fry the onion. 4. Add mushrooms, peppers and garlic and cook for another 2 mins. 5. Add curry powder and flour to the pan and cook for a minute, stirring continuously. 6. Stir in the stock and chicken pieces. 7. Reduce the heat and cook slowly for 10 mins. 8. Serve with rice.
