Pan-fried turkey and ham escalopes |

Ingredients: (Serves 4) 1 tbsp olive oil 500g/18oz turkey breast steaks 8 slices wafer-thin ham 2 tbsp flour 300ml/ ½pt chicken stock 1 tbsp lemon juice Salt Method: 1. Put the turkey breast steaks between sheets of clingfilm and beat out with a rolling pin until about ½cm (¼in) thick. 2. Cut each steak in half, season with salt, then secure a slice of ham to each one with a cocktail stick. 3. Dip the escalopes in flour to coat lightly. 4. Heat the oil in a pan and fry the escalopes for 3 mins each side, then remove from pan and keep warm. 5. Add the remaining flour to the pan, stir and add the stock and lemon juice. Cook for 2 mins and spoon over the escalopes. 6. Remove the cocktail sticks and serve with crispy potatoes and broccoli.
