Ingredients: (Serves 2)
3-4 chicken breast fillets, cut into strips 100ml/3½ fl oz ketchup 3 tbsp oil 1 tbsp dried parsley ½ tsp salt 3-4 cloves garlic, crushed Method: 1. Mix together ketchup, oil, parsley, salt and garlic. 2. Stir the mixture to the chicken strips and leave to marinate for an hour. 3. Heat a non-stick frying pan and fry the chicken strips together with all the marinade for approx 10 mins until the chicken is cooked through. If the sauce starts to dry out during cooking, add few tbsp of water. 4. Transfer to plates and serve with potato puree.
