Chicken breasts in omelette |

Ingredients: (Serves 4) 4 chicken breast fillets 1 tbsp oil 3 eggs, beaten 50g/2oz grated cheese ½ tsp curry powder or paprika Salt, pepper Method: 1. Season the chicken breasts with salt, pepper and curry powder or paprika. 2. Heat the oil in a large pan and fry the chicken breasts for 3-5 mins on both sides (depending on thickness). 3. Mix the beaten eggs with the grated cheese and pour over the fillets. 4. Fry for another few minutes until the eggs are set and serve with chips and salad.
