Creamy baked chicken and potatoes Print E-mail

Ingredients: (Serves 4)  

1.2 kg/2 lb 12oz potatoes, peeled and sliced

1 small onion, finely sliced

4 chicken breast fillets

4 slices pancetta

450ml/ ¾ pt fresh cream

2 cloves garlic, crushed

1 tbsp dried basil

200g/7oz grated cheese

Salt, pepper

 

Method:

1. Preheat the oven to 220°C/fan 200°C and grease an ovenproof dish.

2. Arrange half of the potatoes on the bottom of the dish and season well with salt.

3. Arrange the onion slices on the potatoes and put the chicken breasts on top. Season with salt and pepper.

4. Arrange the pancetta slices on the chicken breasts and cover with the remaining potato slices. Season with salt again.

5. Bake for 35 mins, then mix together cream, garlic and basil and pour in the dish. Sprinkle with grated cheese and bake for further 10 mins until the cheese is golden.
