Ingredients: (Serves 2-3)  450g/1 lb turkey breast steaks 1 large egg, lightly beaten 10 tbsp cornflour 2 slices tinned pineapple + 5 tbsp juice 150ml/ ¼pt fresh cream ½ tsp paprika ½ tsp curry powder 1 tsp vinegar 1 tsp oyster sauce Salt Method: 1. To make the batter put the egg in a bowl and gradually add the cornflour, beating with a whisk until smooth. 2. Cut the turkey breasts into bite-sized pieces, season with salt and dip into the batter, coating well. 3. Deep fry the turkey pieces for 4-5 mins until cooked through. 4. In the meantime chop the pineapple and put in a pan together with the juice. 5. Bring tho the boil and gently simmer for 3 mins, then pour in the cream, add paprika, curry powder, vinegar and oyster sauce and simmer for another 3 mins. 6. Transfer the crispy turkey pieces into the pan, stir quickly to mix with the sauce and serve immediately.
