Double chicken fillets Print E-mail

Ingredients: (Serves 4)  
4 chicken breast fillets
8 pale bacon rashers
1 onion, thinly sliced
200g/7oz grated cheddar
Oil

Method:
1. Preheat the oven to 220°C/fan 200°C and lightly grease a large shallow ovenproof dish.
2. Put the chicken fillets on a worktop and carefully cut them horizontally to make 8 thin fillets.
3. Arrange 4 bacon rashers on the bottom of the ovenproof dish, place 4 chicken fillets on the rashers, top with half on the onion slices and sprinkle with half of the grated cheddar. Repeat the layers, finishing with grated cheese on top.
4. Gently press each pile in the dish with your hands, drizzle with a little oil and cover the dish with a tin foil.
5. Bake for 30 mins, then remove the tin foil and bake for a further 10-15 mins until golden.
