Chicken & mushroom casserole |

Ingredients: (Serves 3)  2 tbsp oil 3 chicken legs 1 onion, halved and sliced 200g/7oz mushrooms, sliced 1 large carrot, cut into matchsticks 1 pepper, cut into strips 1 can Cream of chicken soup (or Cream of mushroom) 1 tsp dried thyme Salt, pepper
Method: 1. Preheat the oven to 195°C/fan 175°C. 2. Heat the oil in a large pan, add onion and cook gently for 3-5 mins; remove from the pan. 3. Season the chicken legs with salt and pepper, add to the pan and brown quickly on both sides. 4. Transfer the chicken legs into a large casserole dish together with the onion, mushrooms, carrot, pepper, thyme and the soup. 5. Season with salt and pepper, cover with lid (or a tin foil) and bake in the preheated oven for an hour. Then uncover and bake for further 30 mins. Serve with rice, chips or potatoes.
