Ingredients: (Serves 2) 2 large skinless chicken breasts 2 slices of ham 2 slices of cheddar Salt Handful of plain flour 1 egg 2 tbsp milk 2-3 handfuls of dried breadcrumbs
Method: 1. Preheat the oven to 200°C and grease a baking sheet. 2. Cut a pocket horizontally in each chicken breast, careful not to cut through. 3. Put a slice of ham and cheese in each pocket (fold the ham and cheese if the pocket is too small) and secure with cocktail sticks. Season with salt. 4. Take 3 bowls and put the flour in one bowl. In another bowl beat the egg with milk and put the breadcrumbs in the last bowl. 5. Coat each of the breasts with flour, then dip in the egg and roll in breadcrumbs. 6. Transfer to the baking sheet and bake for approx 30 mins, depending on the size of the chicken breasts, until golden and cooked through. Serve with mashed potatoes or chips.
