Ingredients: (Serves 4) 4 chicken breasts 1-1.5 cup plain flour 3 eggs, lightly beaten with 1 tbsp water 4 tbsp butter 6 tbsp ketchup 4 tbsp sweet chilli sauce Salt, pepper Oil for frying
Method: 1. To make the sauce melt the butter in a small pan, add ketchup and sweet chilli sauce, stir well and remove from the heat. 2. Cut the chicken breasts into large chunks and season with salt and pepper. 3. Put the flour into one bowl and the eggs in another bowl. 4. Coat the chicken pieces with flour, then dip into the eggs and finally coat with the flour again. 5. Fry the chicken pieces in hot oil in a pan or in a deep fat fryer until golden and cooked through. Remove with a slotted spoon and coat in the sauce.
