Mediterranean chicken casserole |

Ingredients: (Serves 4-6) 3 chicken breasts, cut into chunks 1 onion, chopped 3 large cloves garlic, finely chopped 2 courgettes, cut into large chunks 1 pepper, cut into large chunks 1 tin chopped tomatoes 1 tsp dried thyme 1 tsp dried oregano 1 tsp dried marjoram 1-2 tbsp sugar Salt, pepper
Method: 1. Preheat the oven to 200°C. 2. Put the chicken, onion, garlic, courgettes and pepper into a large ovenproof dish. Season well with salt and pepper. 3. Add a tin of tomatoes plus half a tin of water. Add herbs with sugar and stir. 4. Cover with a lid or tin foil and bake for about an hour and a half. 5. Serve on pasta sprinkled with cheese, or with potatoes.
