Ingredients: (Serves 3) 3 chicken breast fillets 150g/5½ oz grated cheddar 3 large slices of ham 200ml/7 fl oz fresh cream Salt, pepper
Method: 1. Place the chicken fillets onto a chopping board, cover with cling film and flatten with a rolling pin or a meat mallet so it is really thin. 2. Season with salt and pepper and sprinkle with the grated cheese. 3. Put a slice of ham on top and roll each fillet up. Secure with cocktail sticks. 4. Put the rolls into a baking dish, pour over the cream and sprinkle with any cheese that is left on the chopping board. 5. Bake at 200°C for 35-40 mins, depending on size of the rolls. Remove the cocktail sticks before serving and serve with potato mash and salad or rice.
