Chicken breasts in crispy batter |

Ingredients: (Serves 4) 4 chicken breast fillets 2 tbsp plain flour 2 tbsp cornflour 1 tsp baking powder 1 egg, beaten 1 tsp paprika Salt, pepper Oil for frying
Method: 1. In a bowl mix together plain flour, cornflour, baking powder, egg and paprika. Season with salt and pepper and pour in a little bit of cold water, whisking, to make a batter. 2. Season chicken fillets with salt and pepper, dip in the batter and fry in oil until crispy and cooked through.
