Ingredients: (Serves 4) 4 chicken breasts 1 clove garlic, crushed 2 tbsp butter 4 slices mozzarella cheese 12 capers 4 anchovy fillets 2 tbsp chopped parsley 60 ml/2 fl oz marsala 160 ml/¼ pt cream Method: Melt butter in a large frying pan and cook garlic and chicken until browned on both sides. Remove chicken from pan and arrange one slice of mozzarella, one anchovy fillet and three capers on each fillet, sprinkle with parsley. Return chicken to pan, cover and cook on moderate heat until chicken is cooked through. Remove fillets from pan and put on a serving dish. Add marsala to pan, stir, add cream and reduce heat. Simmer uncovered a few minutes until sauce thickens and then spoon over chicken fillets.
