Ingredients: (Serves 4)  600g/1 lb 5½ oz chicken breasts 2 onions, sliced 140g/5oz cheese slices mayonnaise salt, pepper butter Method: Grease an oven-proof dish with butter, put onion slices on the bottom of the dish, arrange chicken breasts on the onions, season with salt and pepper, pour mayonnaise on top and cover with cheese slices. Cover the dish and bake 20 mins at 250°C, uncover and bake until the cheese is golden and bubbling. Serve with potatoes or chips.
