Chicken and courgette bake Print E-mail

Ingredients: (Serves 4)

4 chicken breasts

800g/1 lb 12oz courgettes, sliced

1 onion, slices

2 cloves garlic, sliced

200ml/ 7fl oz white wine

100ml/ 3½fl oz fresh cream

100g/ 3½oz  grated cheese

1 tsp oil

1 tsp oregano

Pinch chilli powder

Salt

 

Method:

1. Season the chicken breasts with salt and chilli powder.

2. Heat the oil in a pan and fry chicken breasts for 2 mins on each side.

3. Remove from the pan and pour the oil from the pan into an ovenproof dish.

4. Preheat the oven to 200°C/fan 180°C.

5. Arrange courgette slices on the bottom of the dish, season with salt and oregano.

6. Put onion and garlic slices on top of the courgettes and arrange chicken breasts on top.

7. Pour in the wine and bake for 30 mins. Then pour in the cream, top with grated cheese, return to the oven and bake for another 10-15 mins until the cheese is golden.
