Roast chicken with orange sauce Print E-mail

Ingredients: (Serves 4)

1 chicken

Salt

6 tbsp olive oil

6 tbsp butter, melted

2 tbsp sugar

300ml/½ pt white wine

1 tsp orange zest

3 tbsp ketchup

2 oranges, peeled and sliced

 

Method:

1. Preheat oven to 210°C/fan 190°C and mix olive oil with butter in a baking tin.

2. Cut the chicken into portions, season with salt and roast for 45-60 mins (depending on the size of the portions).

3. Melt the sugar in a non-stick frying pan on a low heat (be careful not to burn the sugar) and take off the heat.

4. Pour in the wine, stirring continuously, then add the orange zest and ketchup. You can add a little bit of water. Stir well, bring to boil and simmer for a few minutes.

5. Add orange slices and simmer for another minute.

6. Divide the chicken on plates, pour the orange sauce over them and serve.
