Ingredients: (Serves 4) 2 cooked chicken breasts, sliced 40g/ 1½ oz apricots 60g/2oz green seedless grapes, sliced in half 25g/1oz green peppers, cut into strips 25g/1oz red peppers, cut into strips Few drops of Tabasco 40ml/1½ oz mayonnaise Method: 1. In a bowl combine the peppers, apricots, grapes, mayonnaise and Tabasco. 2. Put the slices of chicken breasts on 4 plates and top with the mixture. 3. Serve with a leafy green salad and crusty bread.
