Ingredients: (Serves 4) 1 tin butter beans 1 tin kidney beans 30ml/1 fl oz olive oil 1 red onion, finely chopped 2 cloves garlic, finely chopped 3 tomatoes, peeled and diced Juice and zest from 1 lemon Fresh thyme Salt, pepper Method: 1. Put the beans in a sieve and rinse with cold water. 2. Mix olive oil, onion and garlic in a bowl, cover and put in a microwave oven for 3 mins at 700W. 3. Add beans, tomatoes, lemon juice, lemon zest and thyme and return to the microwave for another 5 mins. 4. Leave to cool, season to taste and serve with wholegrain bread and some green salad.
