Ingredients: (Serves 4) 100g/3½ oz penne 1 red onion, thinly sliced 3 celery stalks, chopped 1 carrot, grated 10cm/4in piece of cucumber, chopped 50g/2oz sweetcorn Large tin of tuna, drained 6 tbsp mayonnaise 6 tbsp natural yoghurt Method: 1. Cook the pasta according to the packet instructions. Drain and refresh under cold water. 2. Cut the onion slices in half to form half moons and put in a large bowl together with celery, carrot, cucumber, sweetcorn and tuna. 3. Add the cooked pasta, mayonnaise and yoghurt and stir until well coated. 4. Serve chilled.
