Ingredients: (Serves 4-6) 450g/1 lb baby potatoes, halved 2 tbsp olive oil 4 chicken breasts, cut into strips Salt, pepper 2 red peppers, cut into strips 4 scallions, sliced ½ cucumber, chopped 6-8 tbsp mayonnaise Method: 1. Cook the potatoes in a pan of salted boiling water until tender. 2. Heat the oil in a pan, season the chicken strips with salt and pepper and stir fry them for 4-6 mins until cooked through. 3. Add the cooked potatoes to the pan and fry for another minute. 4. Transfer the chicken and potatoes to a serving bowl, add peppers, scallions, cucumber and mayonnaise, stir well and serve immediately.
