Ingredients: (Serves 4-6)  750g/1 lb 10oz raw beetroot, peeled and coarsely grated 150g/5½ oz eating apples, coarsely grated 3 tbsp lemon juice Juice from 1 orange 3 tbsp olive oil 2 tbsp icing sugar Method: 1. Mix the lemon and orange juice with oil and sugar to make a dressing. 2. Put the beetroot and apples into a bowl, pour over the dressing and stir well.
