Ingredients: (Serves 4) 300g/10 ½oz fusilli (or any other pasta) 1 onion, finely chopped 4 tomatoes, diced 2 yellow peppers, cut into strips 450g/1 lb tinned sweetcorn 150g/5 ½oz cheddar, diced 200ml/7 fl oz crème fraîche 3 tbsp ketchup Juice of ½ lemon Salt, pepper Method: 1. Cook the pasta according to the packet instructions; then rinse under cold water and drain. 2. Stir in all the vegetables and cheese. 3. Mix together crème fraîche, ketchup and lemon juice and stir into the salad. 4. Season with salt and pepper and refrigerate. Serve chilled.
